My feeling? This delicate journey begins as soon as the wooden and paper door slides and the traditional hostess invites you to enter the place. Once you are seated, your chef prepares you delicious sushi with his warm hands. The salmon is delicately grilled with a torch, the toro melts in the mouth, and the fresh and delicate uni explodes in the mouth. Just like in Japan, you eat the sushi with your fingers, without adding any soy sauce, carefully applying the fish on the tongue and the rice on the top.
The must? As in a traditional omakase, you can ask for the sushi you liked the most if you are still hungry at the end of your menu.
