Interview - Riccardo Camanini

On February 18th, The Foodalist attended the World Restaurant Awards in Paris and had the chance to meet one of the winners, Riccardo Camanini. Lido 84‘s chef has won the House Special for his famous Cacio e Pepe cooked inside a pig’s bladder. 

 

At 18 years old, Riccardo Camanini entered in the kitchen of Gualtiero Marchesi, the only 3 Michelin-starred chef at the time. It is while working with Gualtiero Marchesi that his true passion for gastronomy began. Three years later, he went to England to work with Raymond Blanc at Le Manoir aux Quat’ Saisons. And then, he went to Paris to La Grande Cascade with Jean-Louis Nomicos and Alain Ducasse. 

 

He compares being a chef to being a craftsman. According to Riccardo, being a chef is a job of sensitivity, taste, ability to share but mostly, of generosity.

 

The gastronomic restaurant Lido 84 is located in Gardone, Italy where Riccardo and his cuisine take roots. Lido 84 is definitely on The Foodalist must do’s list. You can read more about this amazing restaurant here.
