Paste is an address that differs from other places of the city. It proposes to rediscover Thai cusine by reinventing recipes with a modern twist. I was surprised to discover that Thai aristocracy recipes from the years 1870 to 1930 had such a huge variety of local ingredients (20 to 35 per dish!), and various flavors.
At the top floor of luxurious Gayzorn Plaza shopping mall, with a view overlooking Ratchadamri road, I chose to taste the dried salmon salad with watermelon balls and local herbs. Its wonderfully sweet and savory blends, suited the cool and crispy side of the fruit perfectly. The crispy rice crackers with sweet roasted duck and the crab with yellow curry and black pepper, with powerful burnt wood aromas, have also charmed me by their inventiveness and balance in the mouth.
Paste is an elaborate and tasty address in the heart of the city, to experiment a different and original Thai cuisine.
