Here is one of my latest discoveries Brussels, perfect in this summer season while everything we are looking for is a bit of fresh, exotic and healthy cuisine.
Here is Knees to chin, a small canteen preparing cold spring rolls right next to rue du Bailli.
Firstly, I adore the name “Knees to Chin”, as it refers to the position of the street eaters in Vietnam – my country – the “knees stuck to the chin,” devouring dishes sitting on their feet or on small chairs.
The place is small, cute and simple, perfect for a healthy lunch break, and offers various kinds of original rice paper rolls (scampi-mango, chicken-pear, duck-green apple, coco omelet-caramelized onions …).
I am personally a big fan of fresh spring rolls as I cook them very often and had the same kind of idea for my own restaurant concept. I can say Knees to Chin rice paper rolls are good and fresh, and although they are a little “plump” for my taste, they have the advantage of quickly satisfy my enormous hunger.
Lunch formulas (2 rolls + side + side or 3 rolls) are served from 11.30 am to 2.30 pm for € 8.50 and € 11.50.
This is about Vietnamese little detail: spring rolls could be executed in a slightly more refined and visually attractive way for my taste.
