My feeling? 

Chef Sergio Herman owns the 2 Belgian coolest culinary scenes: The Jane and Pure c.

At The Jane, he successfully created the trendiest restaurant in Belgium, daring settling down his kitchen in a former Chapel decorated by Piet Boon.

Up in the Mezzanine, you will find the Upper Room Bar, where you can share delicious tapas, and sip crazy cocktails and special beers while overlooking the huge PSLAB chandelier.

At the ground floor, the table have white tablecloths, and invite the guests to enjoy the original and colorful creations of Sergio Herman and Nick Bril’s degustation menu (7 courses € 75 – 8 courses € 90).

That’s where the veal tartare with capers and sardines is adjusted by mozzarella to soften the salty side of the dish, and the quinoa with turnip and prawns is accompanied by piquant and acid juice to balance the neutrality of the cereal. The asparagus with melting eel, the juicy Angus beef, and the caramel and crunchy toffee praline left me other beautiful memories.

Just like his personality and his ambitions, Sergio Herman’s cuisine doesn’t know any limit. He has the audacity to mix World spices with more local products with a lot of intelligence, technique and precision. Just like a “Haute couture” fashion designer, Sergio creates artistic plates, with the perfectionism that made him a 3 Michelin Stars and 20/20 at Gault Millau chef, when he used to be at Oud Sluis restaurant.

All this beautiful fine dining experience takes place in a unique setting – especially for a Michelin starred chef! – where the music is played by trendy DJs, and the atmosphere has a fragrant scent of incense. The funny details of the decoration (stained glasses with tattoo inspirations, giant skull-shaped neon light …) promise you a unique evening, where gastronomy meets show, and takes you on an extraordinary journey. 

The Jane is one of my favorite places in Europe. It has just received its first Michelin star and I wish it many others…  

The restaurant booking system is only online, up to a month in advance for the Upper Room Bar, and 3 months for The Jane.
