I have already mentioned to you my admiration for Sergio Herman, a man with an immense talent and a rock attitude. He’s one of the new generation chefs who understood that the culinary genius has to be mixed with a good branding to ensure sustainability.
Recently, Sergio invited me to his “Fucking Perfect ” movie premiere which explains his exceptional career, beginning at the legendary Oud Sluis. Sergio chose to leave the 3 stars Michelin place with 20/20 at Gault et Millau to concentrate on modern and affordable gastronomy through the fabulous The Jane in Antwerp and Pure C in Cadzand.
Always at the top of the culinary trends, Sergio Herman is a perfectionist and fastidious, and leaves no detail to chance. Arriving through a beachfront hotel entrance, I entered the white and blue Pure C universe overlooking the North Sea. Like at The Jane, I began this timeless moment sipping an original cocktail made with Gin, algae, lime and sea water.
Sergio has nothing to prove anymore. His culinary style is fine and colourful, and offers new and surprising mixtures with visual perfection. To help him in Pure C kitchen, he chose the young Zealander Syrco Bakker with whom he selects the best ingredients.
Each dish was perfectly matched with the wine pairing. I loved the originality of offering two different wines with the same course: a strong one for the raw prawns with verbena and lime, and a sweeter wine to soften their grilled heads.
I also enjoyed the bold beef tartare accompanied by mussels and the raw redfish served with coriander, huacatay, cucumbers and razors. This gourmet and aesthetic meal ended with a spectacular chocolate-blueberry-sorrel-pistachio composition, and a peach sprinkled with pepper tchuli.
Pure C is definitely an exceptional place for fine gourmets.
